Delicious combination of cheese, mushroom and spinach in a quiche
Serves 4 | Preparation Time: 20 minutes | Cooking Time: 35 minutes
Preheat oven to 200C/180C Fan assisted/392F
Grease a quiche/tart tin
Ingredients:
For the base of the quiche:
- 2 cups Plain Flour
- 1/2 cup Sunflower Oil
- 1/2 teaspoon Salt
- 1/4 cup Water
For the filling of the quiche:
- 100g Baby Button Mushrooms (sliced)
- 1 Red Onion (sliced)
- 200g Spinach
- 2 cups Grated Cheddar
- 2 Medium Free Range Eggs (1 lightly beaten)
Method:
- To make the base of the quiche, mix the plain flour with the oil, salt and water to form a smooth dough. Roll dough out on a floured surface and carefully place in the quiche tin.
- To make the filling, in a large mixing bowl add the mushrooms, onions, spinach, cheddar cheese and 1 egg and combine well.
- Place the filling mixture in the quiche tin, and brush the beaten egg over the quiche.
- Bake in preheated oven for 35-40 minutes.
