Cheese, Mushroom & Spinach Quiche

Delicious combination of cheese, mushroom and spinach in a quiche

Serves 4 | Preparation Time: 20 minutes | Cooking Time: 35 minutes

Preheat oven to 200C/180C Fan assisted/392F

Grease a quiche/tart tin

Ingredients:

For the base of the quiche:

  • 2 cups Plain Flour
  • 1/2 cup Sunflower Oil
  • 1/2 teaspoon Salt
  • 1/4 cup Water

For the filling of the quiche:

  • 100g Baby Button Mushrooms (sliced)
  • 1 Red Onion (sliced)
  • 200g Spinach
  • 2 cups Grated Cheddar
  • 2 Medium Free Range Eggs (1 lightly beaten)

Method:

  • To make the base of the quiche, mix the plain flour with the oil, salt and water to form a smooth dough. Roll dough out on a floured surface and carefully place in the quiche tin.
  • To make the filling, in a large mixing bowl add the mushrooms, onions, spinach, cheddar cheese and 1 egg and combine well.
  • Place the filling mixture in the quiche tin, and brush the beaten egg over the quiche.
  • Bake in preheated oven for 35-40 minutes.
