A wonderfully crunchy snack made with spinach and potatoes, perfect for all occasions from a rainy day to serving unexpected guests.
Makes 16 Pakoras | Preparation Time: 20 minutes | Cooking Time: 10 minutes
Ingredients:
- 200g Spinach (chopped)
- 600g Potatoes (peeled & diced)
- 2 Medium Onions (diced)
- 2 Eggs
- 2 tablespoons Lemon Juice
- ½ tablespoon Salt
- 1 teaspoon Cumin Seeds
- 1 tablespoon Garam Masala
- 1 teaspoon Ground Turmeric
- ½ teaspoon Red Chilli Powder
- 1 tablespoon Garlic & Ginger Paste
- 1 cup Gram Flour
- 400ml Water
Method:
- Add all the ingredients to a large mixing bowl and mix until well combined.
- In a large pan of hot oil, add a little pakora mixture to check if the oil is hot enough. If the mixture rises to the top of the pan, the oil is ready.
- Add spoonfuls of the pakora mixture to the oil and fry for around a minute. Turn the pakoras over and fry the other side until golden brown.
- Place on a large plate lined with kitchen towel. Serve with your favourite condiment (pakoras go perfectly with a mint yoghurt sauce).
Tip: For a healthier snack, add a spoonful of mixture to each section of a cupcake/muffin tray and bake instead of fry.
